The other day I wrote this post about how I wanted to start using what I’ve learned through my running to help simplify the rest of my day. Let’s face it: I’ve got my pre-running routine perfected. I know exactly what to eat, when to eat it, what gear to take – all the little things that add up to a smooth, stress-free morning before a big race.
Wouldn’t it be great if I could figure out the same details to make every day go just as smooth?
I’ve been working on it and want to share one of the things that is helping me do just that. Eating the right thing is key on race day but I’ve realized, it’s also one of the things that can simplify every day for my busy family and I. And nothing works better in this regard than peanut butter.
I recently had the chance to try out some great new recipes from Adams Natural Peanut Butter and wanted to share a few of my favourites with you. Each of these easy snacks uses natural peanut butter and other favourites like coconut, jam, oats and even a bit of chocolate. Yum.
Before the recipes however, comes the mixing. As you know, 100% natural peanut butter is just peanuts and a dash of salt so without all the stabilizers, it can separate in the jar. Adams sent me one of these handy contraptions and the boys mixed their hearts out. They were actually kind of sad because I barely needed a stir with my knife after that first good mix.
Anyhow, once the peanut butter was all incorporated again, we got to work on the recipes and here are three of my favourites.
Peanut Butter Oatmeal Smoothie
Nothing is easier than a smoothie, especially when you can include so many good things in one quick mix on the blender. My boys love to help in the kitchen and even with their ‘help’ we had this smoothie put together in minutes.
This smoothie has been a timesaver as both a delicious breakfast and post-run snack. With the natural peanut butter and chocolate milk I know I’m getting some protein and carbohydrates and I always love an easy way to sneak in some extra flaxseeds. Just a couple minutes and I’ve got everything I need to fuel up and my kids love it too.
Mini Peanut Butter Oat Cups
One of the best ways to save time throughout the day is to prepare meals and snacks ahead of time. It’s so much easier to reach for a healthy snack when it’s already prepared and ready to go. Even better is when you can make big batches and freeze them, which is just one of the things I love about this next recipe.
With ingredients like raisins, dried cranberries, oats, bran and even some chocolate, these Mini Peanut Butter Oat Cups have made a perfect snack for everyone around our house. I did the melting of the chocolate in the microwave and the boys helped out by doing the rest of the measuring, mixing and putting cups in the mini muffin pan.
I grabbed a couple of these straight from the freezer the other day for a tasty post-run snack and gave them to my boys for their dessert at the same time! Perfect.
PB & J Popcorn
Yes, you read that right! One of the things Adams wants to do is show us some new ways to enjoy our favourite peanut butter and other flavour combinations, and I can honestly say this is one I never would have thought of but will definitely be making over and over again.
One of the biggest mistakes I make as a busy mom is not having good snacks on hand for the kids and I. When I’m busy trying to manage their schedules and my own activities like running and spin class, I need to have things ready to grab or else I’m more likely to make bad choices.
Even with popping my own corn on the stove, it only takes about 10 minutes of prep time to make this peanut buttery snack. I like having it on hand so that I’ve got something made with natural ingredients instead of salty, processed snacks.
So there you have it, three new recipes that I’ve been using to make things a little easier, eat healthier and save some time throughout the day. Peanut butter has always been a fool-proof part of my running routine and is quickly becoming a big part of saving some time in the rest of my busy day too.
