Just a quick follow up post about soup! I’ll be taking soup to my sister’s house for our annual Halloween dinner so I’ve just made a batch of my new favorite soup – Carrot Ginger Soup. So easy and so tasty. Yum.

A couple people have asked for this recipe so here it is (complete with photos, although I’ll warn you, soup photos are pretty boring!)

Carrot Ginger Soup
  • 2 cups chopped carrots
  • 3/4 cups chopped onion
  • 3/4 cups chopped potato
  • 900 ml of chicken broth
  • 1-2 tbsp chopped fresh ginger
  • pepper to taste
  • sprigs of cilantro

Start by throwing the carrots, potato and onion into a pot with a glob of butter. Brown them for a few mins.

Add the broth, ginger and some pepper and bring to a boil. Once it boils, simmer for about 20 mins.

After it’s done simmering and has cooled, throw it into the blender and blend it up! I use my handy Magic Bullet for this.

And there you go, ginger carrot soup. Serve with a sprig of cilantro and a dallop of sour cream if you like. I’m taking mine with me tomorrow so I’ve just got it in a plastic container in this photo but trust me, it looks really nice with the green cilantro on there.
